The fresh (grated) or dried and chopped fruit peel (pericarp) is used as seasoning. The juice from the fruit also makes a good seasoning. Orange blossoms are processed in special products.
Aromatic, with a pleasant, sweet smell, but tastes rather bitter. The fruit juice is mild and aromatic with a balanced acidity and sweetness. The fragrance of orange blossom water is different to that of ripe oranges; however, it is very pleasant.
