The fully-formed fruits must be harvested when they are unripe as soon as the first berries begin to turn red. The berries are separated from the panicle and then spread out on mats to dry in the sun for 3 days (fermentation process).
The smell is highly aromatic to mildly irritating; the taste is bitingly hot, warm and almost as aromatic as green pepper; sometimes mildly woody. Full aroma: fresh and lightly granulated, or crushed.
